Thought I'd share with you one of my favorite Salmon recipes that my parents thought me. I don't really follow any measurements, but it's up to each and everyone how much food they want.
First, you need a piece of salmon, size depends on how many people are eating. You need some sour cream, feta cheese (crumbles is easier to mash), and red onion.
Secondly, put the salmon in an oven safe form and cut it in the middle half way through to stuff with feta cheese. Put the Feta Cheese in a bowl, I would recommend 3/4 of a cup or so for a piece of salmon this size (2 people) and add a little sour cream (1 table spoon depending on amount of feta cheese). If you don't have sour cream, natural yogurt works just as well. The sour cream/yogurt is just to make the filling more creamy and easier to put on the fish.
Add the onion and mix it all together with some pepper.
Add some pepper on top of the salmon. And then begin to put the feta filling in the little opening you created earlier and then finish by spreading it across the rest of the fish. I have a tendency to add a little too much feta filling, the original recipe only had the opening filled, not the entire top :P
Once you are done, put it in the oven, 375F for about 25-35 min depending on size of salmon. Once the fish is done it should be light pink and flaky when you put a fork through it.
Enjoy with a side of sallad, rice, mashed potatoes or whatever floats your boat :)
This ended up being a TON of food for me. I didn't finish it and still ate too much haha. It is easy to do tho because it is sooooo good :)
It can also be made with individual pieces of salmon if you wish.
It is easy to make and really good. Plus, fish is healthy for you!
